  • 1 lb black-eye peas (soaked overnight, rinsed)
  • 3 cups low sodium chicken broth
  • 3 cups water
  • ½ medium yellow onion, coarsely chopped
  • 1 clove garlic, minced
  • 8 baby carrots, coarsely chopped
  • 1 celery stalk, coarsely chopped
  • 1 tsp fresh thyme
  • 2 bay leaves
  • ½ tsp of Kosher salt
  • Fresh ground pepper to taste
